The recipe
28 g · 514 g water · 97 °C · 3.5 min
- Rinse the paper, tip the rinse through, and add 28 g at a medium-fine grind.
- Bloom with 51 g of 97 °C water for forty seconds, then pour the rest in two even circles.
- The bed should run dry at about four minutes. Swirl the carafe and pour into the diner.
- Serve straight away, while the crema is still whole.
