The recipe
30 g · 501 g water · 95 °C · 3.6 min
- Rinse the paper, tip the rinse through, and add 30 g at a medium-fine grind.
- Bloom with 67 g of 95 °C water for forty seconds, then pour the rest in two even circles.
- The bed should run dry at about four minutes. Swirl the carafe and pour into the paper.
- The wave is set on at the pass, not poured — there is no steamed milk in this one, so it is drawn in the cinnamon with a pick.
- Grate cinnamon over the top — a rasp, not a shaker.
