Flat White in a bone goblet
A flat white in a bone goblet, #132 of 999. Morning light, oak counter. Crema on the surface. Whip. Special blend: Ring Stain. Common, roast score 135.9.
The recipe
18 g · 32 g ristretto · 141 ml milk
- Pull a ristretto — stop it short, around thirty grams, so it stays sweet under the milk.
- Steam 141 ml to 62 °C with barely any air. The texture you want is paint, not foam.
- Pour close to the surface from the start. A flat white is mostly the pour.
- Serve straight away, while the crema is still whole.
- Whip to soft peaks, no further, and spoon it on in one movement.
