The recipe
17.6 g · 21 g chocolate · 163 ml milk
- Melt 21 g of dark chocolate into the shot while it is still hot, and stir until it is glossy rather than grainy.
- Steam 163 ml of milk to 61 °C.
- Pour through the chocolate so it marbles on the way in.
- Pour from height to sink the foam, then drop the jug to the surface and wiggle a bloom through the crema.
