The recipe
90 ml filter · one 18.5 g shot
- Brew the filter first and hold it hot.
- Pull a double and drop it straight in. The point is the caffeine, but it also puts body under a thin filter.
- Serve black in the cortado. Milk makes it muddy.
- The wave is set on at the pass, not poured — there is no steamed milk in this one, so it is drawn in the whip with a pick.
- Whip to soft peaks, no further, and spoon it on in one movement.
