The recipe
cold brew · 17 h steep · 33 psi nitrogen · 4 °C
- Start from a cold brew steeped 17 hours and filtered clear — nitrogen exaggerates whatever sediment is left.
- Charge at 33 psi and let it settle for a minute so the gas goes into solution rather than sitting on top.
- Pour hard through the plate into the mug and let the cascade fall before serving. No ice; it would thin the head.
- The heart is set on at the pass, not poured — there is no steamed milk in this one, so it is drawn in the foam crown with a pick.
- Build the foam a centimetre above the rim and let it set for a moment before it travels.
