The recipe

6 g masala · 90 ml water · 90 ml milk · 4 min

Crack the whole spices — clove, star anise, cardamom — and simmer them in water for 4 minutes before the tea goes anywhere near it.
Add the leaf and 90 ml of milk, and bring it up to the rise three times without letting it boil over.
Strain into the tulip. Sweeten in the pan, not at the table.
Pour from height to sink the foam, then drop the jug to the surface and wiggle a spiral through the crema.
