The recipe
100 g · 740 g cold water · 14 h · 1:7
- Grind 100 g coarse — the texture of raw sugar — and stir it into 740 g of cold water until no dry grounds are left floating.
- Leave it 14 hours in the fridge. Longer is not stronger past a day, only heavier.
- Strain twice, the second time through paper, and serve over ice in the paper.
- The tulip is set on at the pass, not poured — there is no steamed milk in this one, so it is drawn in the foam with a pick.
