The recipe
107 g · 810 g cold water · 16 h · 1:8
- Grind 107 g coarse — the texture of raw sugar — and stir it into 810 g of cold water until no dry grounds are left floating.
- Leave it 16 hours in the fridge. Longer is not stronger past a day, only heavier.
- Strain twice, the second time through paper, and serve over ice in the thermos.
- The heart is set on at the pass, not poured — there is no steamed milk in this one, so it is drawn in the cream float with a pick.
- Float the cream over the back of a spoon so it sits as a layer rather than folding in.
