The recipe
17.8 g · 35 g out · 163 ml whole milk · 65 °C
- Pull a double into the mason and have the jug ready before it finishes.
- Steam 163 ml of whole milk to 62 °C: air for the first two seconds only, then drop the tip under and spin it until the jug is too hot to hold.
- Knock the jug, swirl until it shines, and pour.
- Pour from height to sink the foam, then drop the jug to the surface and draw a dots through the crema.
