1.8 g matcha · 64 ml · 81 °C · whisk 16 s

Sift 1.8 g of matcha into the bowl. Unsifted it clumps and no amount of whisking fixes it.
Add 64 ml at 81 °C — boiling water makes it bitter — and whisk in a W, wrist only, until the surface is all fine foam.
Pour into the goblet straight away; it separates within a minute.
Serve straight away, while the crema is still whole.
Finish with cocoa bean.
