The recipe
18.3 g · 36 g out · 139 ml tonic · over ice
- Fill the paper with ice and pour 139 ml of tonic over it. Ice first, always — tonic poured onto a warm glass goes flat.
- Let the fizz settle, then pour the shot slowly over the back of a spoon so it layers instead of mixing.
- Serve unstirred, with the layers still showing.
- Serve straight away, while the crema is still whole.
- Float the cream over the back of a spoon so it sits as a layer rather than folding in.
