The recipe
17.1 g · 36 g out · 70 ml barista oat · 61 °C
- Pull a double into the cortado and have the jug ready before it finishes.
- Steam 70 ml of barista oat to 64 °C: air for the first two seconds only, then drop the tip under and spin it until the jug is too hot to hold.
- Knock the jug, swirl until it shines, and pour.
- Pour from height to sink the foam, then drop the jug to the surface and draw a tulip through the crema.
