The recipe
6 g masala · 113 ml water · 125 ml milk · 4 min
- Crack the whole spices — cardamom, clove, a short length of cinnamon — and simmer them in water for 4 minutes before the tea goes anywhere near it.
- Add the leaf and 125 ml of milk, and bring it up to the rise three times without letting it boil over.
- Strain into the mason. Sweeten in the pan, not at the table.
- Pour from height to sink the foam, then drop the jug to the surface and draw a bloom through the crema.
- Build the foam a centimetre above the rim and let it set for a moment before it travels.
