The recipe

- Pull a double into the cortado.
- Steam 70 ml to 65 °C with more air than a latte — you are after a third of foam, and it should hold a spoon.
- Pour so the foam lands last and sits a centimetre deep.
- Pour from height to sink the foam, then drop the jug to the surface and wiggle a tulip through the crema.
- Finish with marshmallow.
