The recipe
2.1 g matcha · 61 ml · 84 °C · whisk 15 s
- Sift 2.1 g of matcha into the bowl. Unsifted it clumps and no amount of whisking fixes it.
- Add 61 ml at 84 °C — boiling water makes it bitter — and whisk in a W, wrist only, until the surface is all fine foam.
- Pour into the mason straight away; it separates within a minute.
- The clover is set on at the pass, not poured — there is no steamed milk in this one, so it is drawn in the foam with a pick.
