The recipe

- Grind 98 g coarse — the texture of raw sugar — and stir it into 756 g of cold water until no dry grounds are left floating.
- Leave it 18 hours in the fridge. Longer is not stronger past a day, only heavier.
- Strain twice, the second time through paper, and serve over ice in the tumbler.
- Serve straight away, while the crema is still whole.
- Whip to soft peaks, no further, and spoon it on in one movement.
