The recipe
5 g masala · 125 ml water · 110 ml milk · 5 min
- Crack the whole spices — cardamom, peppercorn, ginger — and simmer them in water for 5 minutes before the tea goes anywhere near it.
- Add the leaf and 110 ml of milk, and bring it up to the rise three times without letting it boil over.
- Strain into the beaker. Sweeten in the pan, not at the table.
- Grate cinnamon over the top — a rasp, not a shaker.
