The recipe
107 g · 859 g cold water · 14 h · 1:8
- Grind 107 g coarse — the texture of raw sugar — and stir it into 859 g of cold water until no dry grounds are left floating.
- Leave it 14 hours in the fridge. Longer is not stronger past a day, only heavier.
- Strain twice, the second time through paper, and serve over ice in the diner.
- Spoon the foam on last so it sits proud of the rim rather than folding in.
- Build the foam a centimetre above the rim and let it set for a moment before it travels.
