The recipe
18.1 g · 28 g ristretto · 135 ml milk
- Pull a ristretto — stop it short, around thirty grams, so it stays sweet under the milk.
- Steam 135 ml to 58 °C with barely any air. The texture you want is paint, not foam.
- Pour close to the surface from the start. A flat white is mostly the pour.
- Serve straight away, while the crema is still whole.
- Whip to soft peaks, no further, and spoon it on in one movement.
