- Start from a cold brew steeped 18 hours and filtered clear — nitrogen exaggerates whatever sediment is left.
- Charge at 32 psi and let it settle for a minute so the gas goes into solution rather than sitting on top.
- Pour hard through the plate into the mason and let the cascade fall before serving. No ice; it would thin the head.
- The rosetta is set on at the pass, not poured — there is no steamed milk in this one, so it is drawn in the foam with a pick.
