The recipe
94 g · 846 g cold water · 18 h · 1:9
- Grind 94 g coarse — the texture of raw sugar — and stir it into 846 g of cold water until no dry grounds are left floating.
- Leave it 18 hours in the fridge. Longer is not stronger past a day, only heavier.
- Strain twice, the second time through paper, and serve over ice in the cortado.
- The rosetta is set on at the pass, not poured — there is no steamed milk in this one, so it is drawn in the foam crown with a pick.
- Build the foam a centimetre above the rim and let it set for a moment before it travels.
