The recipe
17.8 g · 22 g chocolate · 20 ml milk
- Melt 22 g of dark chocolate into the shot while it is still hot, and stir until it is glossy rather than grainy.
- Steam 20 ml of milk to 60 °C.
- Pour through the chocolate so it marbles on the way in.
- Serve straight away, while the crema is still whole.
- Finish with cocoa bean.
