The recipe
1.9 g matcha · 61 ml · 80 °C · whisk 14 s
- Sift 1.9 g of matcha into the bowl. Unsifted it clumps and no amount of whisking fixes it.
- Add 61 ml at 80 °C — boiling water makes it bitter — and whisk in a W, wrist only, until the surface is all fine foam.
- Pour into the cortado straight away; it separates within a minute.
