The recipe
5 g masala · 120 ml water · 120 ml milk · 5 min
- Crack the whole spices — cardamom, clove, a short length of cinnamon — and simmer them in water for 5 minutes before the tea goes anywhere near it.
- Add the leaf and 120 ml of milk, and bring it up to the rise three times without letting it boil over.
- Strain into the paper. Sweeten in the pan, not at the table.
- Pour from height to sink the foam, then drop the jug to the surface and wiggle a spiral through the crema.
