The recipe
30 g · 515 g water · 96 °C · 3.7 min
- Rinse the paper, tip the rinse through, and add 30 g at a medium-fine grind.
- Bloom with 63 g of 96 °C water for forty seconds, then pour the rest in two even circles.
- The bed should run dry at about four minutes. Swirl the carafe and pour into the paper.
- Spoon the foam on last so it sits proud of the rim rather than folding in.
