Latte in a terracotta tulip
A latte in a terracotta tulip, #383 of 999. Roastery light, marble counter. Rosetta on the surface. Cinnamon. Special blend: Ring Stain. Common, roast score 104.6.
The recipe
17.7 g · 33 g out · 120 ml whole milk · 61 °C
- Pull a double into the tulip and have the jug ready before it finishes.
- Steam 120 ml of whole milk to 65 °C: air for the first two seconds only, then drop the tip under and spin it until the jug is too hot to hold.
- Knock the jug, swirl until it shines, and pour.
- Pour from height to sink the foam, then drop the jug to the surface and draw a rosetta through the crema.
- Grate cinnamon over the top — a rasp, not a shaker.
