- Grind 18.3 g fine enough that the first drops take five seconds to appear, and distribute before you tamp.
- Pull to 38 g in 25 seconds. If it runs fast it will taste thin and sour; if it chokes, coarsen by a hair and pull again.
- Serve in the tumbler without waiting.
- The spiral is set on at the pass, not poured — there is no steamed milk in this one, so it is drawn in the foam crown with a pick.
- Build the foam a centimetre above the rim and let it set for a moment before it travels.
