The recipe
7 g masala · 121 ml water · 122 ml milk · 4 min
- Crack the whole spices — cardamom, peppercorn, ginger — and simmer them in water for 4 minutes before the tea goes anywhere near it.
- Add the leaf and 122 ml of milk, and bring it up to the rise three times without letting it boil over.
- Strain into the mug. Sweeten in the pan, not at the table.
