The recipe

1.7 g matcha · 63 ml · 79 °C · whisk 14 s

Sift 1.7 g of matcha into the bowl. Unsifted it clumps and no amount of whisking fixes it.
Add 63 ml at 79 °C — boiling water makes it bitter — and whisk in a W, wrist only, until the surface is all fine foam.
Pour into the diner straight away; it separates within a minute.
The wave is set on at the pass, not poured — there is no steamed milk in this one, so it is drawn in the cocoa dust with a pick.
Dust cocoa over a stencil held a finger above the surface.
