2.2 g matcha · 69 ml · 83 °C · whisk 17 s
- Sift 2.2 g of matcha into the bowl. Unsifted it clumps and no amount of whisking fixes it.
- Add 69 ml at 83 °C — boiling water makes it bitter — and whisk in a W, wrist only, until the surface is all fine foam.
- Pour into the tulip straight away; it separates within a minute.
- Serve straight away, while the crema is still whole.
