The recipe
21 g · 40 ml · 4 °C · under UV
- House pull, kept cold, cut with tonic water for the quinine — that is the part that lights up, and the only part of this that is not ordinary coffee.
- Build in the demitasse over one large cube so it dilutes slowly.
- Serve under the sign. In daylight it is a cold americano with a strange colour.
- The feather is set on at the pass, not poured — there is no steamed milk in this one, so it is drawn in the foam with a pick.
