The recipe

- Grind 102 g coarse — the texture of raw sugar — and stir it into 781 g of cold water until no dry grounds are left floating.
- Leave it 17 hours in the fridge. Longer is not stronger past a day, only heavier.
- Strain twice, the second time through paper, and serve over ice in the mug.
- The wave is set on at the pass, not poured — there is no steamed milk in this one, so it is drawn in the cocoa dust with a pick.
- Dust cocoa over a stencil held a finger above the surface.
