The recipe
30 g · 530 g water · 94 °C · 4.2 min
- Rinse the paper, discard the rinse water, and add 30 g at a medium-fine grind.
- Bloom with 60 g of 94 °C water for forty seconds, then pour the rest in two even circles.
- The bed should run dry at about four minutes. Swirl the carafe and pour into the cortado.
- Serve straight away, while the crema is still whole.
