The recipe

- Pull a double straight into the demitasse.
- Steam a small jug to 60 °C — warm, not hot, and flat.
- Cut the shot with the same volume again. It should be one colour all the way down.
- Pour from height to sink the foam, then drop the jug to the surface and draw a wave through the crema.
- Rest a sugar cube on the saucer. It is for the drinker to decide, not the barista.
