The recipe
31 g · 468 g water · 95 °C · 4.2 min
- Rinse the paper, discard the rinse water, and add 31 g at a medium-fine grind.
- Bloom with 62 g of 95 °C water for forty seconds, then pour the rest in two even circles.
- The bed should run dry at about four minutes. Swirl the carafe and pour into the mug.
- The spiral is set on at the pass, not poured — there is no steamed milk in this one, so it is drawn in the foam with a pick.
