The recipe
8 g powder · 62 ml · low heat · three rises
- Grind to a powder finer than espresso — it never gets filtered, so it has to be fine enough to settle.
- Cold water and coffee into the cezve together, sugar now if at all, and bring it up slowly.
- Take it off at the first rise, return it, and repeat three times. Pour the foam out first, then the rest, and let it stand a minute before drinking.
- The tulip is set on at the pass, not poured — there is no steamed milk in this one, so it is drawn in the whip with a pick.
- Whip to soft peaks, no further, and spoon it on in one movement.
