The recipe
2 g matcha · 71 ml · 81 °C · whisk 18 s
- Sift 2 g of matcha into the bowl. Unsifted it clumps and no amount of whisking fixes it.
- Add 71 ml at 81 °C — boiling water makes it bitter — and whisk in a W, wrist only, until the surface is all fine foam.
- Pour into the bowl straight away; it separates within a minute.
- The rosetta is set on at the pass, not poured — there is no steamed milk in this one, so it is drawn in the foam crown with a pick.
- Build the foam a centimetre above the rim and let it set for a moment before it travels.
