The recipe
17.3 g · 18 g chocolate · 136 ml milk
- Melt 18 g of dark chocolate into the shot while it is still hot, and stir until it is glossy rather than grainy.
- Steam 136 ml of milk to 64 °C.
- Pour through the chocolate so it marbles on the way in.
- Serve straight away, while the crema is still whole.
