- Pull a double into the goblet.
- Steam 105 ml to 64 °C with more air than a latte — you are after a third of foam, and it should hold a spoon.
- Pour so the foam lands last and sits a centimetre deep.
- Pour from height to sink the foam, then drop the jug to the surface and wiggle a heart through the crema.
- Grate cinnamon over the top — a rasp, not a shaker.
