The recipe
33 g · 504 g water · 96 °C · 3.9 min
- Rinse the paper, discard the rinse water, and add 33 g at a medium grind.
- Bloom with 73 g of 96 °C water for forty seconds, then pour the rest in two even circles.
- The bed should run dry at about four minutes. Swirl the carafe and pour into the bowl.
- The tulip is set on at the pass, not poured — there is no steamed milk in this one, so it is drawn in the cinnamon with a pick.
- Grate cinnamon over the top — a rasp, not a shaker.
