The recipe
30 g · 532 g water · 97 °C · 3.6 min
- Rinse the paper, discard the rinse water, and add 30 g at a medium-fine grind.
- Bloom with 54 g of 97 °C water for forty seconds, then pour the rest in two even circles.
- The bed should run dry at about four minutes. Swirl the carafe and pour into the diner.
- Spoon the foam on last so it sits proud of the rim rather than folding in.
- Whip to soft peaks, no further, and spoon it on in one movement.
