The recipe
108 g · 826 g cold water · 13 h · 1:8
- Grind 108 g coarse — the texture of raw sugar — and stir it into 826 g of cold water until no dry grounds are left floating.
- Leave it 13 hours in the fridge. Longer is not stronger past a day, only heavier.
- Strain twice, the second time through paper, and serve over ice in the bowl.
- Serve straight away, while the crema is still whole.
- Grate cinnamon over the top — a rasp, not a shaker.
