- Rinse the paper, tip the rinse through, and add 31 g at a medium-fine grind.
- Bloom with 63 g of 95 °C water for forty seconds, then pour the rest in two even circles.
- The bed should run dry at about four minutes. Swirl the carafe and pour into the demitasse.
- Serve straight away, while the crema is still whole.
