The recipe
1.8 g matcha · 71 ml · 81 °C · whisk 19 s
- Sift 1.8 g of matcha into the bowl. Unsifted it clumps and no amount of whisking fixes it.
- Add 71 ml at 81 °C — boiling water makes it bitter — and whisk in a W, wrist only, until the surface is all fine foam.
- Pour into the beaker straight away; it separates within a minute.
- Rest a sugar cube on the saucer. It is for the drinker to decide, not the barista.
