The recipe
2 g matcha · 77 ml · 82 °C · whisk 14 s
- Sift 2 g of matcha into the bowl. Unsifted it clumps and no amount of whisking fixes it.
- Add 77 ml at 82 °C — boiling water makes it bitter — and whisk in a W, wrist only, until the surface is all fine foam.
- Pour into the tumbler straight away; it separates within a minute.
- Finish with marshmallow.
