The recipe
32 g · 532 g water · 97 °C · 3.7 min
- Rinse the paper, discard the rinse water, and add 32 g at a medium grind.
- Bloom with 58 g of 97 °C water for forty seconds, then pour the rest in two even circles.
- The bed should run dry at about four minutes. Swirl the carafe and pour into the cortado.
- The sunburst is set on at the pass, not poured — there is no steamed milk in this one, so it is drawn in the gold leaf with a pick.
- Finish with gold leaf.
