The recipe

18.8 g · 18 g chocolate · 131 ml milk

Melt 18 g of dark chocolate into the shot while it is still hot, and stir until it is glossy rather than grainy.
Steam 131 ml of milk to 61 °C.
Pour through the chocolate so it marbles on the way in.
Spoon the foam on last so it sits proud of the rim rather than folding in.
Build the foam a centimetre above the rim and let it set for a moment before it travels.
