Flat White in a bone tumbler
A flat white in a bone tumbler, #576 of 999. Roastery light, oak counter. Heart on the surface. Foam Crown. Special blend: Overflow. Common, roast score 130.1.
The recipe
17.2 g · 32 g ristretto · 121 ml milk
- Pull a ristretto — stop it short, around thirty grams, so it stays sweet under the milk.
- Steam 121 ml to 58 °C with barely any air. The texture you want is paint, not foam.
- Pour close to the surface from the start. A flat white is mostly the pour.
- Pour from height to sink the foam, then drop the jug to the surface and wiggle a heart through the crema.
- Build the foam a centimetre above the rim and let it set for a moment before it travels.
