The recipe

House pull, kept cold, cut with tonic water for the quinine — that is the part that lights up, and the only part of this that is not ordinary coffee.
Build in the paper over one large cube so it dilutes slowly.
Serve under the sign. In daylight it is a cold americano with a strange colour.
The bloom is set on at the pass, not poured — there is no steamed milk in this one, so it is drawn in the foam with a pick.
